- Colorado Springs Food Rescue is a non-profit organization whose goal is to create a more just and less wasteful food system. We facilitate the sustainable redistribution of food waste to agencies that feed hungry, homeless, and low-income populations while educating communities about and advocating for food justice and the reduction of structural poverty. CSFR partners with LILA mobile home parks, community centers, affordable housing apartments and schools to collaboratively devise community-led solutions to food insecurity. This begins with bringing fresh groceries to these communities, and holding community members in charge of handling the operations of a weekly food distribution program. Once this foundation of food security is generated, there is the opportunity for classes, events, and educational media that is relevant to the community. In 2015, nearly a quarter million pounds of fresh, healthy food were rescued, offsetting the food budgets of local non-profits and low-income households by over $400,000. We collaborated with food insecure communities to create 5 community-led grocery distribution programs, including a high school internship.
